Plant Based Wintertime Delights

Make these delights for your next function!

All you will need for these Wintertime Delights is 6 food items plus six steps and an optional plant based protein powder of your choice. My choice is a vegan brand that you can find on my Extras page because the taste is exceptional. Protein powders often smell great but the taste - ugh.
This is a no-bake recipe. It is gluten and dairy free but contains nuts: almond and walnut.
Ingredients:
1/2 cup Oats
1/4 cup Dried Cranberries
3/4 cup Almond butter
1/4 cup Maple Syrup (keep some extra nearby)
1/4 cup Walnuts (chopped)
1/4 cup Shredded Unsweetened Coconut
Optional: 1 scoop Vanilla Complete Protein Powder

Directions:
Prepare a baking sheet with parchment paper or line a cookie tin.
In a medium bowl, add half of the maple syrup with the almond butter and mix well.
Then add one dry ingredient at a time until all mixed in. If you find the batter is too dry, add a little bit of the maple syrup.
Now all is combined except the coconut. Take a bit of the batter at a time and roll into 1/2" balls.
In a shallow serving dish, pour the shredded coconut. Roll the balls into the dried coconut and place on the parchment paper.
The Delights should be stored in an airtight container in the fridge or on the counter up to three days.
Yields: 20-24 Delights

Protein bites/balls are a classic recipe and I'm glad because there are so many renditions. At one time, it was a new trend and I knew it would last because we are always looking for ways to eat healthier easier!
Updated: At the end of January (2020), I tried a new recipe from my personal trainer and the ingredients were dates, walnuts, sesame seeds, lemon juice + zest, and shredded coconut. I'm going to try my hand at them soon!
